How to set up midi control on the input reverse switch in scratch live and assign it to one on the ttm57?

Click the "midi", mouse over the input reverse switch, click it, press button/knob/slider on MIDI controller you want to assign for it.

On the 57, just right click whatever button or joystick direction you want to assign it to and select input reverse from the list.
