1. If your computer is powerful enough (with a decent graphics card), yes.
2. The output preferences are contained within Serato Video, you can adjust to most screen aspect ratios but that is dependent on the type of display you're outputting too.
You should download it and try it in demo mode to get a better understanding of what it does and how it works.

1- Apple MacBook 2,2GHz,
but my Quicktime starts 1/2 second after I pressed the space bar.
May I hope that Serato will be faster?

You'll have to explain what you mean by panoramic. Do you mean widescreen? Because you can set the output to 16:9 in the settings.
Sounds like your laptop isn't going to be good enough anyway. Regular MacBooks only had fairly limited integrated graphics, not dedicated graphics cards.
And if it is already struggling just playing movies in QuickTime, Serato video is WAY more demanding than that. You've got no chance.

If your Macbook is one of the "Late 2007" or later models (from the 2.2gHz speed you list, I believe it is in fact a late-2007), you *could* run video using an older (probably 1.9.2) version of Scratch Live and Video-SL (not the newer "Serato Video"). With no video effects and some tweaks, and with 4gb RAM installed, such a setup can do an okay job playing videos. One example of a tweak that helps on some older MacBooks is setting Scratch Live's main display refresh rate low (5 or 10).
The newer Scratch Live versions and apparently Serato Video have too much additional CPU overhead to be useful for videos on older hardware lacking a dedicated GPU.
If your MacBook is pre-"Late 2007", forget about it in any circumstance. The integrated graphics on the earlier MacBooks was much lower-powered than what was introduced with the "Late 2007" models.
If you're considering trying what I mentioned with the older versions, I'd recommend you be running either the Leopard or Snow Leopard versions of Mac OS (*not* Lion, which is more resource-heavy).
If you're running older Rane/Serato hardware like the SL-1 or 57 mixer, what I described would be at least worth trying.

May I hope that Serato will be faster?
yes, it is faster (mostly, sometimes there can be a delay due to "write issues")
but it does not work the way you think it does.
it does not turn on or engage quicktime.
it does not follow quicktime parameters for output.
based on what you are asking the equivalent would be "will there be a delay when playing mp3s in ssl? when i play an mp3 itunes takes a few seconds to start."

"Panoramic" viewing in Quicktime:
The content is scaled to fit your screen and the outer horizontal edges
compressed to avoid cropping the image.
It's good cause 4/3 videos fills the entire 16:9 screen,
and the center is not distorted.

yeah if you like squished fat people...
is that not what stretched does? it will stretch the 4:3 to 16:9

Yes but "panoramic" stretches the sides left and right only.
Center is preserved, the effect is good. See here:

What if there is a person on the edge of the screen though? They still get stretched. But it would look super weird. There's probably a good reason why I've never come across that technique in any pro visualisation software.

Of course, but in the heat of battle, with the movements, it goes.
It's as if the camera had filmed in wide angle

Leaving aside the weird "panoramic" tangent...
...was any of the considerable detail I bothered to give actually helpful to you?
Just wondering.

those settings are in the TVs.
everywhere you go you are going to run into different ways TVs and Projectors handle a 4/3 (640x480) image.
but if you have access to the remote controls you can go ahead and switch them up.
but as mentioned before most of us like to preserve the original contents AR integrity
which means your going to have black bars on the right and left.
or if the editor made his own "fill" on the black boxes to occupy the screen real estate.
so, TVs and Projectors are set to Native or 16.9
if you are using Mix Emergency there is a setting to fill those black bars with a few different
if you goto 28:30 in our video you can see what we mean (even though the example is a 16.9
video)

I've been using serato video with my ns6 and vci 300 out of convenience for the last couple of weeks but decided to use my turntables and ttm 57 with mix emergency again. The video output quality is like night and day. Its a shame, hopefully inklen and serato figure something out or serato starts working on engineering a better product.

+1
have used VSL since it first dropped but have just started using ME & the difference in video quality is very noticeable. I wish i had switched to ME years ago!!!
I don't even see myself even considering upgrading past SL 2.3.3 (or buying a 62) until either ME works and serato video at least has a proper media bank, random transitions & delay compensation.
unfortunately when you think about how many years we have been waiting for serato to bring in decent key lock & remember the fact that they also make pitch n time but still cant do key lock properly in their own DVS software the chances of video serato ever catching up with ME look pretty slim..

To think that Serato has seen How ME looks like they should've upgraded it to a comparable quality.
So let's just hope that one day ME walks hand in hand with Serato.
