Back when I was in college, there was a big uproar on campus because one of the dorms wanted to have a "picnic." There was so much controversy over using that word, they changed it to "barbecue." But then some folks claimed even that term had racial origins; so finally the event was officially called a "cookout."
One way or another, everybody still wanted chicken and ribs on the grill... and some potato salad...

Well, I'm not really sure what that means, but "barbecue" comes from a method of cooking from a now extinct aboriginal Caribbean tribe.
I'm a white guy from Toronto--if there are some sensitive issues behind this word that stem from another culture/place, I'd love to be enlightened.

That's the etymology I've found for barbecue as well. However, the claim I heard back in college was that it evolved from the phrase "barb-a-coon," wherein folks from The South (TM) would string up Mr. Joe Blackman and literally burn him at the stake.
However, looking back at it all, I don't ever recall anyone citing references for any of those "racially-originated" slogans...

So to barb someone would be to run a sharp stick through them. And perhaps some really mean-spirited person added fire to the mix just because... hey... you got a dude on a stick...:-(
But yes, to me it sounds like urban-legend-hoax crap.
And for the record, a barbecue/picnic/cookout isn't a barb-pic-out (new word?) without potato salad. ;-)
