I received the projector I won of ebay. Yayyyyyyy!

I'll be using my MacBook Pro A1260 (pre unibody) with it. Funny, I only now realized that is doesn't have an s-video output like my powerbook before it.

This projector has every input known to man (or at least, known to me)

Should I go straight DVI to DVI? What's the max length for that?

Or can I go longer lengths with some other contraption like DVI to a yellow RCA adapter?

I usually use S-video, since most of the clubs are already wired for that and the resolution of the videos is right about there anyways. I use a 100 ft regular (cheap, not super duper shielded) S-video cable I bought from directron.com for $20 and quality is fine.

Carry your Apple video adapters. I always bring the DVI to VGA, and DVI to RCA & S-video, and carry each associated cable. In my experience, the VGA cables tend to "go bad" quicker than others, and I usually limit the length of those to 15ft. But again, I usually just buy cheap cables online and not the more expensive shielded models. I don't mess with the RCA since anywhere RCA is, S-video is also available.
