When I run serato 2.1 will I still be able to keep the controls I have assigned to my Novation Dicer, or will it automatically use the preset ones that are in 2.1 ?

They should remain if you mapped them to the custom user slots on the dicers (see here... www.novationmusic.com , page 7)
