Nothing wrong with cooking. I cook probably 3-4x a week. You save a ton of money and you feel like you're accomplishing something.
I make a mean Tomato Sauce using Mario Batali's recipe: food.ivillage.com
The only chance I make is I cook it a lot longer -- last batch I made I let simmer for 9 hours. Came out as thick as oatmeal. Froze a bunch.

To be honest I have no reason to joke. My missus taught me a tonne of Jamaican recipes so I could cook food the way she's used to. That girl is far too sneaky for her own good lol.
Rice and Peas.
Long Grain Rice
Red/Kidney Beans
Garlic Powder
Salt
Butter
Cocunut Milk/Butter or real Coconut if you can be bothered
Spring Onions
Pepper Kernels
Soak the kidney beans over night in some water and garlic powder then wash in the morning. Once thats done put them in a pot with some water and boil until you can squeeze one open. The water should be dark red when done.
Wash the rice. I tend to boil the rice first then wash off all the starch.
When the kidney beans have been softened add the kidney beans and the water they cooked in to the washed rice and add some coconut milk, a spoonful of butter, some salt a few pepper kernels and a sliced spring onion.
Put the lid on and leave to cook on a low flame untill done.
Brown Stewed Chicken.
Chicken
Lime/Vinegar
Browning Sauce
Onions
Peppers Regular and Scotch Bonnet
All Purpose Seasoning
Brown sugar.
Oil
Thyme
Clean the chicken. Cut off all the nasty shit you don't want and then soak in some lime or vinegar for a few minutes. Whilst thats being done. Cut some onions, peppers etc. When that's done. Put a pot on the fire. When the pot is hot add some oil and leave till the oil has boiled and quietened down.
Get a bowl and add a load of the browning and some all purpose seasoning. Wash the lime/vinegar off the chicken and throw it in the bowl and turn untill the chicken is covered. Better obviously if you've done this from the night before.
When that's done take the chicken and throw it in the pot and lightly fry it until every piece is crispy. You're not looking to cook the chicken yet just kind of seal in the flavour.
Add some water to the leftover marinade in the bowl and mix. Take that water, the onions and peppers and thyme and throw it in the same pot as the chicken. Add a small amount of the brown sugar and leave to cook. Depending on how much time you have and how big the chicken pieces are I'd say about 45 mins to an hour to cook. I have in the past left it for hours all the water is boiled off and there is just the chicken and a thick gravy sauce at the bottom of the pan. I then throw is some more water mix it up and then let it boil again so that the chicken is proper rich in flavour and super soft. I'm talking the meat falls off the bone soft lol.
Serve the chicken with the rice and peas and a nice glass of ice cold mauby or carrot juice. For the true west indian experience add ketchup to every meal when served lol.
Which reminds me I need to buy some mauby.

Oh and if you're serious about your pepper cut up the scotch bonnet and then take middle you know the seeds and stem and add that to the rice when its boiling. Proper!

Basic marinara tomato sauce:

And here's how it went together:
Brown a pound of ground beef in two tablespoons of olive oil then add a couple cloves of chopped garlic, a finely chopped onioin, a chopped stalk of celery and a peeled and diced carrot. Let that saute together over medium heat for 10 minutes, stirring often, then add two 28 oz cans of tomatoes, a few cups of chicken stock or water, a couple heaping spoons of dried oregano, some Pinot Noir red wine, three points of star anise (ground) and salt and pepper. Bring to a simmer and let cook uncovered for a couple of hours.
I made the sauce a few days ago. For this dish I boiled some penne in generously salted water and meanwhile heated some sauce in a fry pan and added a bit of water and more olive oil to loosen it up. When the pasta was ready, just drain and toss in and let simmer all together for a couple minutes. Plate it up and top with red chili flakes and parmesan or romano cheese.

Yeah, I would think so. I use the chimney starter (also made by Weber) so that I don't have to use lighter fluid. Charcoal can get to much higher temperatures than a gas grill so that's great for searing beef.

Yeah, D90. Works great.
The banana went into the pancake batter! I thought that was obvious. You can see the little chunks of banana in the pancakes when they're poured into the pan.

Hawk don't use that fork on a non-stick pan. The chemicals get into your food and they aren't good for your body.

Yeah, for some reason I prefer the fork usually for cooking. I find spatulas and other larger implements clumsy with most things.
And don't worry about the teflon dj lad - that pan is built for use with metal utensils. As mentioned, I've been hacking away at that little pan for three years and it's as good as new. That's a $40 pan. For those of you buying the $7 pans at Walmart, listen to dj lad! I've also got a $60 Joyce Chen wok that's built for metal utensils, and all the rest of my gear is riveted restaurant-grade that I buy from a restaurant supply shop.

Ha! Will do Boba! I make bread a couple times a week so I'll try to have something together over the next couple of weeks. I just made bread (one loaf and eight hamburger buns) yesterday so we're good for a bit. I'll do a recipe and video on ribs eventually too. Tis the season!

The reason why I'm so drawn to your blog besides the clean looking layout and pictures is because the stuff you cook is straight forward and simple but look delicious. It's something everyone on this forum could probably make.
I cook quite often however lately I've been lazy and making a lot of meals in crockpots so I have massive amounts of food for the week.

Yeah, I second the notion on the ribs. Some crock pot receipes would be helpful also.

pad thai is my favorite food. I eat it about once a week and I actually just ate some. LOL
I've made pad thai before and it's one thing that I feel it's cheaper and easier to just buy at a good thai joint because
1) It requires a lot of ingredients. Unless you plan on cooking a lot of Thai food, the extra tamarind, nam pla (fish sauce), peanuts, vinegar etc is going to go to waste and it's cheaper just go buy it made.
2) one KEY thing to making pad thai is the proper seasoned wok AND a deep stove pit or similar contraption so you can get HIGH HEAT evenly around the wok . I think the best pad thai has a little brown/burnt flair to it.

By the way if anybody lives in LA or more specifically the Valley. THE BEST pad thai is Krua Pad Thai at Krua Thai in North Hollywood.
That ISH is soooo good. They use a cup of dried baby shrimp and seasoned ground chicken in it.
